The ingredients needed to prepare Chicken Piccata:

  1. Get 4 of thinly sliced boneless skinless chicken breast.
  2. Provide 1/3 cup of flour plus 1 tablespoon.
  3. You need 1 tbsp of capers chopped.
  4. Provide 3 of garlic cloves minced.
  5. Prepare 2 of tablespoons chopped fresh parsley.
  6. Prepare 4 of tablespoons of butter.
  7. Use 4 of tablespoons of extra virgin olive oil.
  8. Take 1 of zest & juice of 1 lemon.
  9. You need 1 1/2 of cups of chicken stock.
  10. Use 1 of lemon thinly sliced.

Steps to make Chicken Piccata:

  1. Heat olive oil and 2 tablespoons of butter in a deep saute pan over medium heat.
  2. Dredge the chicken breast in 1/3 of cup of flour and shake off the excess.
  3. Fry chicken breast in 2 batches until nicely browned. And remove to a plate.
  4. Add the remaining 2 tablespoons of butter to the pan . Once melted add the capers and garlic & cook for 2 minutes..
  5. Add the zest & juice of 1 lemon and stir to combine..
  6. Add the remaining tablespoon of flour and whisk for 2 min..
  7. Add the chicken stock and bring to a boil whisking constantly..
  8. Once boiling reduce heat to low and stir in parsley..
  9. Add chicken back to the pan and the slices of lemon. Cover and heat for 5 minutes..
  10. Then plate the chicken topped with sauce. I serve it along side spaghetti with garlic and olive oil but mashed potatoes work well also..
